It is the most popular Serbian indigenous grapevine variety and most commonly grown in South Serbia, where it gives the best grape quality. Its performance is dictated by soil and aspects of the site where it is grown. The most suitable for this variety are the terrains with plenty of sun exposure, expressed relief and well drained soils. It is the late-harvest variety (at the time of Cabernet Sauvignon). It tends to be highly vigorous and to give best results in infertile soils. For high-quality red wines, yield restriction is necessary. The berries are dark-blue with expressive stem, while the skin is very thick and medium sensitive to diseases. By content and structure of the phenols in the seed, it is very similar to the variety Pinot Noir.Red wines from Prokupac are of dark ruby colour, medium-bodied, with dominant flavour of ripe cherry and highly expressed tannins. As Prokupac matures in oak barrels, its fruity flavour deepens and takes spicy notes. Dry rose wines from Prokupac have very specific tannin structure, characteristic of Prokupac. Doja Prokupac has been produced by classic maceration – delestage procedure, remontage and submergingthe cap of grape musts, skins, seeds and stems. Fermentation is done 9-12 days at the temperature of 22-24°C. The wine aged 9-12 months in new barrique barrels from Serbian oak (QuercusSessiliflora).
